Soft Mandazi Recipe
Soft mandazi is one of the easiest tea-time snacks to enjoy at home. This recipe is simple, budget-friendly and good for breakfast, tea breaks and family snacks.
Ingredients
- 3 cups all-purpose flour
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cardamom, optional
- 1 egg, optional
- 3 tablespoons margarine or butter
- 3/4 cup milk or coconut milk
- Oil for frying
Method
- Mix flour, sugar, baking powder, salt and cardamom in a bowl.
- Rub in margarine or butter until the flour looks slightly crumbly.
- Add egg if using, then add milk slowly while mixing.
- Knead into a soft dough and rest for 20 to 30 minutes.
- Roll out the dough and cut into triangles or squares.
- Fry in medium-hot oil until golden brown on both sides.
- Drain and serve warm with tea.

- Let the dough rest before rolling.
- Fry on medium heat so the mandazi cooks inside without burning outside.
