Soft Mandazi Recipe for Kenyan Homes and Small Food Sellers
Mandazi is one of the easiest snacks to start selling because people buy it for breakfast, tea time, school snacks, office snacks and home events. The secret is making it soft, lightly sweet and not too oily.
Ingredients
- 3 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon cardamom or cinnamon
- 2 tablespoons margarine or butter
- 1 cup warm milk or water
- 1 egg, optional
- Oil for deep frying
Method
- Mix flour, sugar, baking powder and cardamom in a bowl.
- Rub in margarine or butter until evenly mixed.
- Add warm milk or water little by little and knead into a soft dough.
- Cover and rest for 20 to 30 minutes.
- Roll the dough and cut into triangles or squares.
- Fry in medium-hot oil until golden brown.
Common Mistakes
- Oil too hot: the outside browns quickly but the inside remains uncooked.
- Too much flour during kneading: the mandazi becomes hard.
- No resting time: the texture becomes tight and less soft.
How to Sell Mandazi
Start with office workers, school snack orders, neighbours and tea-time deliveries. You can also combine mandazi with chapati, buns, doughnuts and cinnamon rolls as a weekly snack package.
